Spicy Salmon with Avocado and Lime Salsa

Makes: 4 servings

Ingredients

1 lime

1/3 cup peeled diced mango

2 tablespoons lime juice

1 avocado diced into small cubes

1 diced tomato

1 cucumber, diced

1/2 small red onion diced

Chilli

1 cup coriander chopped thinly

2 tsp fish sauce

2 tablespoons plain flour

2 tsp cumin

2 tsp paprika

1/2 tsp tumeric

4 salmon steaks

Notes / Directions

Peel then chop lime flesh into pieces. Add into bowl with avocado, mango, cucumber, diced tomato onion, chilli and coriander.

Combine oil, fish sauce and lime juice in small bowl and toss with salad.

Combine flour and dry spices in shallow dish. Brush fish with oil, dip into flour mix. Cook 2-3 minutes per side, depending on thickness. The salmon may need to bake in the oven for even heating.
