Christmas Pancakes

Today’s healthy Christmas idea is quite simple but looks great when stacked correctly. The trick is making the different size pancakes. These could be enjoyed on Christmas morning, or any time during Summer. If you can’t find star fruit (carambola) at your supermarket or market you can substitute with kiwi fruit, rockmelon or honey dew melon. Just use a small star shaped cookie cutter to make the stars.

Click here for instructions. The recipe used is a packet mix, but for a twist you could try an eggnog pancake recipe here. To reduce the fat content use low fat milk and cream, and use spray oil when making the pancakes.
