Beetroot, pumpkin, walnut and feta salad

Only 10 sleeps until Christmas! I had two Christmas parties today, so I made a colourful salad, as well as some gingerbread biscuits. This salad is really easy, simply bake pumpkin in a medium oven for 40 minutes. After the pumpkin is cooked, let it cool. Then add it to spinach leaves, feta, walnuts and baby beet roots. Dress it with balsamic vinegar. Delish.
